Lipids are a diverse class of compounds that contribute to the organoleptic, physiochemical, and nutritional aspects of foods. Food lipids provide a major source of energy in the diet. In addition, the variety and amount of lipids in food are closely related to human health and disease. As a consequence, profiling of the various lipids content often represents the first step in food characterization, aiming to evaluate the origin and quality of food. Alfa Chemistry can conduct research and analytical services on various lipids components in all kinds of foods. Our laboratory fully equips with the most advanced technologies and chromatographic systems for conducting specialized research and analysis of lipid in food. Our services include fatty acid profiling, phospholipids analysis, sterols analysis and neutral lipid analysis.
Alfa Chemistry is committed to the comprehensive analysis of lipids in food. The detectable foods and test items are as follows.
Meat | Milks and dairy products | Eggs and egg products |
Nuts | Edible oils and nutraceutical oils | Vegetables |
Grains | Seafoods | .... |
Service items | Main analytical targets | Method summary |
Fatty acid profiling |
| Generally, fatty acids are analyzed by gas chromatography (GC) after conversion to fatty acid methyl esters (FAMEs). |
Phospholipids analysis |
| Appropriate extraction methods such as Folch method are used and then the samples are analyzed by chromatography or mass spectrometry such as high-performance liquid chromatography–evaporative light scattering detection (HPLC-ELSD) and LC-MS. |
Sterols analysis |
| In general, the sterol analysis is by gas chromatography with flame ionization detection (GC-FID). |
Neutral lipid analysis |
| In general, the neutral lipid analysis is by gas chromatography with flame ionization detection (GC-FID). |
